You will with each brew, generate a new SCOBY. These can be used for your next batch, given away to friends or you can keep in a 'SCOBY Hotel'. Often, they will be thinner and smaller than the original one your received as this took longer to get to the desired size, you can put more than one in a brew at a time if this is the case. Below are some ideas of what else you can do with additional SCOBYs or vinegary brew.
Simply a storage jar where they hang out between use. Put them in with a little of the starter or kombucha, add a little sweet tea (cool of course) so that they are covered in liquid and you can leave them somewhere out of the way. A new SCOBY will again grow on top if it's not disturbed and you will end up with kombucha vinegar, great back up starter or other uses. Around 3 months you should decant, remove the yeast build up and top up with fresh tea.
These are chewy with gummy bear texture.
Cut the SCOBY into 1" squares - if it's thick, separate the layers first. Goes well sprinkled lemon zest and ginger. 2 different options to make gummies below:
1 - coat in sugar and boil for 15 mins then allow to cool.
2 - boil 50/50 sugar/water and reduce. Marinade the pieces overnight then put in a dehydrator (or spread on parchment paper, and bake at LOWEST oven setting for several hours.
These range from pureeing and applying as a face mask, to using as a plaster. Chickens apparently love them, and dogs can have a little sometimes.
Many people compost them.
The vinegar can be used in salad dressings or put in a spray bottle, add some essential oils and use as a cleaner.
